Homemade Granola

Ever looking for a quick on-the-go snack? Need a boost of energy? Just want something crunchy, salty, and sweet at the same time? Granola is the go to. The basics are oats, honey and a wee bit of butter, and then the extras are all up to you. Add your favorite nuts, dried fruits, seeds…. pretty much anything goes.

  • 6 c. oats
  • 2/3 c. honey
  • 2 tsp vanilla
  • 1 Tbs. butter
  • 1 Tbs. cinnamon
  • 2 Tbs. brown sugar
  • 1 tsp. nutmeg
  • 1/2 c. sunflower seeds
  • 1/2 c. almond slices
  • 1.2 c. walnut pieces
  • 1 c. dried berries
  • 1 c. raisins

Preheat oven to 365 degrees.

In a large mixing bowl, combine the oats, nuts, seeds, brown sugar and spices.

In a glass bowl or measuring cup, combine the honey, vanilla and butter. Warm in the microwave for 30-45 seconds, until liquified. Stir together to fully combine.

Pour the honey butter mixture over the oats, and mix thoroughly. Add the dried berries (NOT raisins*) and continue to mix until all ingredients are coated.

Spread mix evenly onto 2 sheet pans that have been coated with butter or canola cooking spray. Bake while stirring occasionally with a spatula, until granola is a nice golden brown, 20-30 minutes. Remove from oven and toss in the raisins. Allow to cool.

*Sometimes, baking raisins causes them to get a little bitter. If you like the baked raisin flavor, then add the raisins when you add the berries to the mixture.
